Almost every cuccumella problem comes down to three or four recurring mistakes. Recognizing them takes you from “I can never get it right” to a perfect cup every time.
The coffee won’t come down (or drips painfully slowly)
Almost always caused by: a grind that’s too fine, or coffee that’s been tamped down. The water can’t find a way through and gets trapped.
- Solution: use a medium-coarse grind (drip-style) and don’t tamp the coffee, just level it off.
Boiling water shoots out at the flip
Normal within limits, but if it splashes too much:
- Cause: the pot is overfilled, or the flip was hesitant.
- Solution: don’t fill water past the vent hole; flip decisively, in one motion, near the sink.
The coffee is bitter
- Causes: grind too fine, water too hot, or the pot left on the heat after the “flip.”
- Solution: use a coarser grind, water at 90–95°C (194–203°F), just below boiling, and take it off the heat before flipping.
The coffee is weak or watery
- Causes: grind too coarse, too little coffee, or a cuccumella used at half its capacity.
- Solution: grind a bit finer, keep to a ratio of roughly 1:16, and fill the cuccumella to its full size.
Metallic taste
- Cause: a new aluminum cuccumella that hasn’t been seasoned yet.
